Raw Vegan After Dinner Mints with Truth Naturals CBD Oil

I’ve been a fan of CBD (cannabidiol) for quite some time now. I initially started using a Medipen to help treat my anxiety and insomnia which worked out quite well at first but became too easy to use too much and became ineffective. I was sent out all 3 flavours to work with (natural, peppermint, and lemon) and the peppermint was by far my favourite. I instantly thought of making some Raw Vegan After Dinner Mints because I 1 – love chocolate, and 2 – I have been missing these bad boys since I went Paleo a billion years ago.

All of Truth’s CBD oils are organic and are free from gluten, wheat, dairy, soy, sugars, sweeteners, and artificial flavourings and colours which makes them accessible to literally anyone. I’ve been using the 1000mg tincture which contains 33mg of CBD per serving and is made from Phytocannabinoid Rich Hemp Oil blended with MCT oil. It’s so easy to use, travel with, and you can take it directly or just mix into your food and drink. I can vouch that all the flavours taste brilliant but peppermint was definitely my fave. The natural flavour might take some getting used to though, but if you’ve ever dabbled with a little weed in your youth then the only way I can describe the taste is like day old bong water.

If you’re not too familiar with CBD then listen up – it is 100% legal and no you cannot get high from it! It has a zero THC  (tetrahydrocannabinol) formula, CBD itself is nonpsychoactive – that means that it isn’t mind altering. In fact, CBD has been found to be an effective antipsychotic and is becoming a more widely recognised treatment (even by the NHS) for schizophrenia, anxiety, panic attacks, depression, post-traumatic stress disorder, and obsessive-compulsive disorder. CBD has also been found to possess immunomodulatory (immune boosting), neuroprotective, anticonvulsant, and anti-inflammatory properties. So if you’re hitting the gym hard a lot, or competing in your sport at any level, you’ll find it really effective for recovery and reducing the effects of DOMS (Delayed-Onset Muscle Soreness).

Anyway, enough of my scientific gibble gabble… As you probably all know by now, peppermint aids in digestion which is why we call these little bad boys After Dinner Mints, however with the addition of CBD it will help you to feel even more relaxed and pain-free after a big meal! Feel free to eat 1 or 2 of these to get a good dose of CBD and don’t worry if you eat the whole lot because you just can’t overdose on this stuff! For the recipe, you’ll need a large 50mm silicone mould with 8 cubes or a brownie tin measuring roughly 20cm/8″x20cm/8″x6cm/1.5″. If you go down the brownie tin route then you might find it hard to make perfect squares and can go for a more rustic ‘bark’ look.

Serves: 8
For the raw chocolate layer:

  • ¾ cup coconut oil (melted)
  • ¾ cup cacao powder
  • ¼-1/3 cup maple syrup
For the mint fondant:

  1. If using a brownie tin start by greasing and lining this with parchment paper. Divide all of your ingredients for the raw chocolate layer equally between 2 separate heatproof bowls. Place one bowl over a pan of gently simmering water (don’t allow the water to touch the bowl) and heat until fully melted. Always use a low heat when melting cacao-based ingredients and never any higher to yield best results. Once melted divide equally between each silicone mould cavity, I found using a tablespoon measure the most effective way of doing this. If using a brownie tin just simply pour in your chocolate mixture. Place in the fridge or freezer until set.
  2. Next, it's time to whip up your fondant. Start by powdering your xylitol and cane sugar using a milling blade attachment in a bullet style blender. Sieve half of your powdered sugar into the bowl of your stand mixer, or if using a hand mixer a large mixing bowl will suffice. Add your aquafaba and mix until well combined. Add your remaining powdered sugar and the rest of your fondant ingredients and mix until you reach a thick and spreadable but smooth paste.
  3. Once your chocolate has fully set divide your peppermint fondant equally into each indentation or alternatively spread an even layer using an offset spatula. Place back into the fridge or free until set (this could take up to 1 hour).
  4. Before removing your fondants from the fridge melt down the remaining chocolate ingredients using the previous method. Remove your fondants and again pour over the chocolate. If using a brownie tin you might find tipping the tray to move the chocolate around an easier method than spreading. Place back into the refrigerator until set.
  5. Once set carefully pull away from the sides of your mould before pushing out the chocolates or alternatively transfer from your brownie tin and break apart.
All cup measurements used are UK cup measurements. 1 cup = 250ml, 1 tbsp = 15ml.

Additional equipment required: 1 x large 50mm Silicone Mould No.8 Cubes (holds roughly 125ml per indentation) or a brownie tin (20cm/8"x20cm/8"x6cm/1.5").

If using essential oils please ensure that they are both food grade and organic first!

Please note prep time is inclusive of setting time. The actual recipe takes about 15-20 minutes to make!

    Georgie, I just bought some – it arrived yesterday. I haven’t cooked with it yet (I bought the natural flavour) but it really does make me feel more relaxed after taking it – thank you for letting us know about it! I might get the peppermint one next so I can make these lovely mints.
