Karmen the founder of the Flower and Spice organic skincare range is a huge fan of baking with spices from around the world, so much so that she includes them in her products which she formulates herself. I recently collaborated on a review (which you can read here) and Karmen and I both got chatting quite a bit. Karmen loves my recipes and so she asked if I’d like to design a cake using the spices contained within her range. I was already so inspired by the Flower and Spice products and of course, with my Middle Eastern roots, I couldn’t think of anything more beautiful to make than a rose and coriander cake. So, naturally, I agreed and rose (get it?) to the challenge. For me, from a photography and food styling point of view, I was a little bit scared as my work is very minimalistic and not too girly either but I am so unbelievably happy with how the photos turned out.

Traditionally this isn’t one of the healthiest cakes due to the highly processed sugar content so I’m really happy to be able to create a healthier version that tastes just as good. Once baked you douse the cake in a generous serving of honey and rose water syrup which is just utterly divine. If you’re not a huge fan of Christmas cake then this would make a fab alternative too.
As with all of my recipes it is fully gluten-free and free from processed sugars making it suitable for coeliacs and those following a Paleo diet. And, don’t forget that the key to glowing skin firstly comes from having a clean diet, free from toxins.
