So sometimes when the baby is screaming at me with her big lungs and pulling at my trousers whilst I make lunch I just want food to fall into my bowl and well… my mouth. I want a feed tube really but we all know that that isn’t a) possible or b) practical. So that’s why I came up with this deliciously quick and nutritious Raw Green Blender Soup which I can just whip up and chow down in minutes. It’s suitable for anyone following a gluten free diet, a Paleo diet, and even for vegans.
To make this soup you’ll need a Nutribullet type blender or immersion blender.
Serves: 1 person
Prep Time: Less than 5 mins
Ingredients:
For the soup:
1 small bulb fennel (chopped)
1/2 cucumber (chopped)
1 spring onion (chopped)
1 stick celery (chopped)
1/2 lime (quartered and with or without zest it’s up to you!)
1 clove garlic (peeled)
1 tbsp apple cider vinegar (with the mother)
1/4 tsp Himalayan pink salt
1/4 cup filtered cold water
Optional toppings:
1/4 avocado (diced)
2 sprigs flat leaf parsley
Small handful walnuts (crushed)
1 tbsp chia seeds
1 tbsp avocado or flax oil
1-2 tbsp nutritional yeast
Method:
- Place all of the ingredients for the soup into your blender – I used a Nutribullet but an immersion blender would also work too! Blend until smooth.
- Serve into a bowl and top with either some or all of the optional toppings! Quickest lunch ever!
