Peppermint Crunch Popcorn (Gluten-Free, Vegan)

So, I’ve gone a little bit crazy for popcorn and peppermint this month – but honestly, can you blame me? This Peppermint Crunch Popcorn is both gluten-free and vegan making these winter Netflix and chill nights suitable for the whole family. Peppermint Crunch Popcorn might just be the best festive combo ever – buttery popcorn, raw chocolate, and crunchy peppermint pieces.

Now, this does contain crushed up candy canes but if you don’t want to add any processed sugars you can simply throw in some extra peppermint extract and stir in either xylitol or coconut sugar at the end, or blend it up with the rest of your sugars if that’s easier. But for those of you that end up with a bunch of candy canes on Christmas day and don’t know what to do with them, this is the one! You could, of course, crush them up and throw them over a Peppermint Raw White Hot Chocolate for something a little bit different.

You’ll also be making simple raw chocolate to coat the kernels in too. If you want to get the best coating on your popcorn then make sure you use mushroom kernels – they puff up into balls and have a nice even and large surface area so no matter what your coating is it will stick to them. I also coated some of the kernels with gold lustre dust but seriously this isn’t necessary and probably a little bit too overboard… I just really love sparkly shit…
