I’ve been loving creating new things using the Ninja Foodi Multi-Cooker and in the past, I’ve always thought of pressure cookers being solely for meat dishes. So, I kinda wanted to put the Foodi to the test and see what awesome things I could come up with. So far I’ve created some super funky things like a Morrocan Salmon Tagine and some Spicy BBQ Cauli Wings (yes they’re totally vegan!) but I have a real love of snacks, in particular, popcorn. It’s my weekend movie night treat and usually, I make the kids a caramel based popcorn so I wanted to try something completely different and savoury which is how I ended up making a Gourmet Pizza Popcorn instead.

Sometimes I find making popcorn from scratch a bit of a faff, it’s pretty smoky when made in a pan, sometimes you aren’t sure if it’s done and end up just burning the popcorn at the bottom but with the Foodi I found it so much easier. The downside, however, was that there was a little bit more washing up to do and there were a few extra kernels lying in the bottom of the pan but that’s totally better than burnt popcorn. The quality of the popcorn was a lot less dense than when made in a pan and the process was a lot less painstaking as you didn’t have to continuously jiggle a pan about for ages.
This Gourmet Pizza Popcorn has all of the flavours of pizza – I used fresh basil, tomato paste, and dried herbs to achieve this plus lots of nutritional yeast and parmesan. Now, even though I didn’t make this recipe vegan on the Ninja site but it can be easily adapted – just sub the butter for vegan butter and the parmesan can easily be replaced with a brand like Violife who do some crazily impressive vegan cheeses (not sponsored in anyway I just know they make good stuff!). This popcorn is seriously dangerous and you’ll probably eat the whole lot in one go but it’s a lot more healthy than eating sweet versions, yes even ‘healthier sweet’ versions that I make. It’s also great tossed into salads or thrown on top of soups for a fun garnish.
