Strawberries and Cream Paleo Power Balls

Valentine’s Day is right around the corner and after an indulgent Christmas I’m sure you’re all right there with me on the quest for some healthy, unbaked festive treats? Right?

Well boy have I got just the thing for you – Strawberries and Cream Paleo Power Balls! Yup you soooo heard me right!

Most power ball recipes that I find are usually made with just dates – and a lot of dates – which I find almost a little bit too unbearable to consume due to how sweet they are. I prefer tart and fresh flavours and these Strawberries and Cream Paleo Power Balls are just that – tart, fresh, but also sweet and creamy. With Valentine’s Day coming up these would make the perfect gift for the more health conscious, or heavily active, significant other.

I used white mulberries in my recipe as they are lower in sugar and have that gorgeous creamy, and toffee like flavour to them that make them perfect for the sort of strawberries and cream feel. White mulberries are so much better than dates in my opinion due to them being high in antioxidants, vitamin C, iron, and carotenoids.

You don’t have to make these into balls though you can place the mixture into a lined tin, pour over the chocolate, sprinkle the goji berries, and then leave to set before slicing into squares!

Tiny Paleo Power Balls that pack a strawberries and cream energy punch. Perfect as a Valentine's Day gift to the health and fitness conscious foodie.

Ingredients
For the power balls:

Instructions
  1. Combine all of the power ball ingredients, except for the 50g melted cacao butter, into the bowl of your food processor. Pulse a few times before processing until smooth. You'll probably need to scrape down the sides a few times with a silicone spatula to ensure that it gets processed evenly.
  2. Next pour in your melted cacao butter. It's best to melt your cacao butter on a low heat over a bain marie. Pulse a few times and process until smooth, being sure to scrape down the sides frequently.
  3. Leave the mixture to cool for 30 minutes until it becomes a lot more malleable.
  4. Take around a tablespoon of the mixture and gently roll into a ball using the palm of your hand. Repeat until all of the mixture has been used up. If you prefer then line a Pyrex dish like this one and knuckle in the mixture until evenly distributed.
  5. Next place your power balls into the fridge whilst you melt your cacao butter and cacao paste over a low heat in a bain marie.
  6. Whilst your chocolate is being prepared grab a handful of your goji berries. Place two berries side by side and squeeze at the bottom to form a heart shape. Repeat until you have 25 hearts to top your power balls with.
  7. Once your cacao butter and cacao paste has fully melted give it a stir with a silicone spatula. Remove your power balls from the fridge and taking a teaspoon start to drizzle chocolate, in a zig zag manner, over your power balls. If you chose to create more of a 'slab' then simply pour over the entire lot and smooth with your spatula until even.
  8. Next top with your goji hearts and leave for a further 15 minutes in the freezer to set. Et voila!

*Please note that Prep Time is equal to 15 minutes plus 45 minutes 'setting' time.
