Smoked Salmon Green Goddess Bowl

Due to my autoimmune disease I have to have animal protein once a week, it seems to keep me in remission this way. I’m really not keen on eating meat for so many different reasons so fish is always my go to, particularly wild (sustainably caught) salmon. I’ve made a couple of salmon dishes for Ninja Kitchen – a Moroccan Style Tagine made in their Foodi Multi-Cooker and a Shirataki Noodle Soup which I have to say is one of my favourites. But, now that the weather is hotting up I really crave salads so I knew I had to make something light and zesty like this Smoked Salmon Green Goddess Bowl.

This Smoked Salmon Green Goddess Bowl is a light and zesty salad filled to the brim with beautiful green veggies and a gorgeously green herby dressing.

I packed this salad full of amazing green veggies like asparagus, purple sprouting broccoli, and rocket but also threw in some pumpkin and sesame seeds for a little extra nutrient boost. The Green Goddess dressing is made with lots of healthy fats like avocado, coconut yoghurt, extra virgin olive oil, and some delicious green herbs for a powerful green flavour. I used dill, parsley, and tarragon as they go so well with fish. If you’re vegan the dressing and salad are vegan so you can easily throw in some tempeh, crispy fried tofu, or chickpeas and beans, and if you’re a vegetarian mozzarella or some hard cheese can go well too. Feel free to switch the herbs up to really make this salad your own!
