Peppermint Raw White Hot Chocolate with CBD (Keto, Paleo, Vegan)

o The mornings are becoming colder and darker, the Christmas songs are beginning to creep in, and the supermarkets are absolutely full to the brim of Christmas products and promotions so is it any surprise that I’ve got Christmas recipes on my mind already? I think not! For my first Christmas recipe, I’m recreating the beloved Starbucks drink and giving it a healthy upgrade. My Peppermint Raw White Hot Chocolate comes with an adaptogenic twist of course – I’ve infused it with my favourite Truth Naturals Peppermint CBD Tincture. I’m currently sat here, well stood here thanks to my standing desk, with a whopping virus. Or a cold. I can’t quite decide which one. Anyway, CBD is THE best painkiller and certainly trumps paracetamol and ibuprofen any day in my books, so, I thought it would be a good idea to create a comforting drink that could also double up as a super cold and flu treatment.

This Peppermint Raw White Hot Chocolate with CBD is super festive and perfect for battling those pesky winter bugs. Keto, Paleo, and vegan friendly.

Be warned this is quite a sweet drink, so if you’re not a white chocolate fan don’t worry turn it into a mocha with 1 or 2 shots of espresso or really strongly brewed coffee. Personally, when I’m ill I’m happy to drink anything sweet to keep my energy levels up and it’s something I’ve certainly needed to just get through the school runs this week. The Starbucks original carries a whopping 71g of processed sugars whereas my version just has roughly 9-11g of natural sugars if using agave nectar or raw honey. Obviously, if you’re using xylitol or erythritol this would be a 0g sugar drink for you.

I like to use cashew milk for this, it lends a more creamy and milk like flavour but literally, any milk would be suitable. If you’re using full-fat tinned coconut make sure it doesn’t have any added gums or preservatives (citric acid is okay) and blend it up before using. You might also want to dilute 1:1 with water for a more natural milk-like consistency. This drink also has a very generous amount of raw cacao butter in it but don’t let that put you off as it comes with a tonne of health benefits. Cacao butter is full of fatty acids such as oleic acid, palmitic acid, and stearic acid that are all antioxidant-rich and help to fight free radicals. They are also really great for reducing the appearance of age, boosting immunity, and giving you a steady boost of energy. Which I think we can all admit is what we need when winter hits.

I topped with regular whipped cream from a spray can because I was all out of coconut milk but if you want to make your own coconut whipped cream it’s super simple. If you head on over to my Healthy Starbucks Unicorn Frappuccino recipe there’s a simple how-to. I did also add a crushed up peppermint lolly for added dramatic effect and to make my pictures more interesting but I’d suggest only doing this on special occasions due to the highly processed sugar content. I’m on the lookout for some sugar-free erythritol candy canes but just can’t seem to find them, so if you come across them before I do then give me a shout. A better option might be some tiny Christmas themed sprinkles and these days you can find them made with natural sugars. Again, you could take it one step further and soak some desiccated coconut in a small amount of naturally coloured water and leave to dry out in a dehydrator.

The good news is that this is like the easiest recipe you’ll ever find on my blog. If you’re rubbish at cooking then this is definitely the recipe for you. I’ve also only catered it to one person, the reason being that it makes it easier to calculate when making for multiple people and you won’t have to faff about with the division, just multiply by the number of people you need to make it for. Besides, sometimes you just want something special for you, and you only. Mamas, I know you know what I’m talking about! This Peppermint Raw White Hot Chocolate with CBD is super festive and perfect for battling those pesky winter bugs. Keto, Paleo, and vegan-friendly.

Ingredients
  • 1 cup plant milk of choice
  • 25g cacao butter (finely chopped/grated)
  • 1 tbsp raw honey/agave/erythritol/xylitol
  • ¼ tsp vanilla powder or ½ tsp vanilla extract (optional)
  • Pinch sea salt or Himalayan pink salt
  • 2-4ml Truth Naturals Peppermint 500mg CBD Oil Tincture (*If using an unflavoured CBD oil tincture, or if only using 1ml of peppermint tincture, add ¼-1/2 tsp peppermint extract to taste.)
  • 3 drops White Chocolate Medicine Flower Extract (optional)
Instructions
  1. Add your milk, cacao butter, sweetener of choice, vanilla (if using), and salt to a small heavy-bottomed pan. Place on a low heat, stirring frequently, and heat until the cacao butter has melted then remove from the heat. Do not allow to boil but if it comes to a slight simmer be fast to remove from the heat.
  2. Transfer to a large Nutribullet style blending jug and add your CBD oil and Medicine Flower Extract and peppermint extract if using. Leave to cool for a few minutes then blend on low for no longer than 5-10 seconds. Repeat if necessary. You may want to blend small batches at a time as generally these blenders are not safe for hot liquids but I'm a natural born risk taker clearly! Transfer to a mug or heatproof glass and top with whipped coconut cream if you wish.
Notes
Not a fan of white chocolate? Add 1-2 shots of espresso or strongly brewed coffee and make it a mocha.

Per 1ml of the 500mg tincture you'll get a 16.6mg dose of CBD. If you've got a particularly bad cold 4ml will act as a brilliant pain relief dosage.

*All cup measurements used are UK cup measurements and so 1 cup = 250ml.
