Healthy Starbucks Unicorn Frappuccino (Paleo, Vegan, Gluten-Free)

If you’d like a side order of diabetes with your Unicorn Frappuccino then by all means head on back to Starbucks… If however, you value every internal (and external) organ in your body then you’ll probably want to stay right here. A healthy Starbucks Unicorn Frappuccino I hear you say? That’s not possible is it? Oh don’t be so silly… you knows it is people! I’ve switched up copious amounts of sugar for my favourite zero carb sweetener, erythritol, and added in a little bit of light agave nectar to keep that sort of naughty sweetness that this drink would have. I haven’t actually had the original Starbucks drink but after reading a few reviews the general consensus was a super sweet strawberry birthday cake flavour with a hint of mango, and a sour blue raspberry hit. The flavour and colour changes as you drink it and if you want you can stir it up too.

Now before I tell you what’s in my version I want you just take a look at this list of ingredients in the REAL Starbucks Unicorn Frappuccino:

Ice, Milk, Crรจme Frappuccino Syrup [Water, Sugar, Salt, Natural And Artificial Flavor, Xanthan Gum, Potassium Sorbate, Citric Acid], Whipped Cream [Cream (Cream, Mono And Diglycerides, Carageenan), Vanilla Syrup (Sugar, Water, Natural Flavors, Potassium Sorbate, Citric Acid)], Mango Syrup [Sugar, Water, Mango Juice Concentrate, Natural Flavor, Passion Fruit Juice Concentrate, Citric Acid, Potassium Sorbate, Turmeric, Gum Arabic], Blue Drizzle [White Chocolate Mocha Sauce (Sugar, Condensed Skim Milk, Coconut Oil, Cocoa Butter, Natural Flavor, Salt, Potassium Sorbate, Monoglycerides), Classic Syrup (Sugar, Water, Natural Flavors, Potassium Sorbate, Citric Acid), Sour Blue Powder (Citric Acid, Color [Spirulina, Water, Sugar, Maltodextrin, Citric Acid])], Pink Powder [Dextrose, Fruit And Vegetable Color (Apple, Cherry, Radish, Sweet Potato)], Sour Blue Powder [Citric Acid, Color (Spirulina, Water, Sugar, Maltodextrin, Citric Acid)].

Now that’s a pretty hefty list, and yes some of those things in there may seem prettyย healthy upon first glance if you weren’t so clued up – I mean, they did at least attempt to use natural colourings in their ‘fairy dusts’, but my main qualm with this multicoloured monstrosity however, is its sheer amount of refined sugars – 59g per 16 fl oz (grande) to be exact. That’s 19g over the NHS’ RDA and the equivalent of 15 teaspoons of sugar, about 2 chocolate bars (think Mars or Double Decker), and more than a big can of Coca-Cola. If that doesn’t seem too bad then you’re a) a freak or b) a lunatic… but yes a venti has 75g of sugar which should be enough to put off all the weirdos. What’s even more worrying is the amount of videos I’ve seen of small toddlers chugging away on it like it’s a bottle of water. I’m not usually one to judge other people’s parenting techniques but this really did make me feel a bit sick to the stomach and dead inside, like my soul has been sucked out of my body. I mean you can’t blame the kids – this drink does sound like a super fun experience and it has the most beautiful and mesmerising colour scheme, but us parents should honestly be able to exercise the power of rational thought with these things. So anyways, that’s enough moaning I’ve made this as a healthier alternative for parents to whip up for summer parties and sleep overs (you can thank me later).

But what’s in my healthy Unicorn Frappuccino then? Well, in a nut shell:

Ice, cashew milk, erythritol, light agave nectar, mango, Hybrid Herbs Pitaya Powder, freeze-dried strawberry powder, E3 Live Blue Majik, malic acid, vanilla powder, and whipped coconut cream.

I think we can all agree that this sounds a lot less gross than the original ingredients list. Forget the taste though – you’ll reap all of the nutritional benefits from the pitaya powder which is high in antioxidants, dietary fibre, vitamins C, B1-B3, calcium, iron, phosphorus, magnesium, and Omega-3 fatty acids. Not to mention the high levels of Phycocyanin in Blue Majik which can help to keep you looking young and protect your cells and joints.ย The malic acid is an organic compound found in fruits which is naturally sour (think green apples) and can aid in treating chronic fatigue syndrome as well as increasing energy levels and your body’s tolerance to exercise.

So you can either get diabetes and feel sick by drinking 59g of sugar or you can feel revived and energised with my Healthy Starbucks Unicorn Frappuccino. I know what I’d go for!

Now, if you don’t want this to melt fast – say you’ve got quite a few guests to cater for – then you can add in up to 1/8 a tsp of xanthan gum to help prevent it from melting. Personally I don’t think this is necessary but if you want a more authentic ice drink, and you aren’t sensitive to xanthan gum, then by all means go for it. I personally don’t see the point as I think that this drink is good enough without it. Also you don’t have to add in the mango, I tried the mix without and it was still rather lush. The same goes for the vanilla powder too.

But anyways, enough of my whittering on, without further ado… here is the recipe for my Healthy Starbucks Unicorn Frappuccino!

Ingredients
For the pink unicorn dust:

For the blue unicorn dust:

  • 1 tsp E3 Live Blue Majik
  • 1 tsp eryhtritol/xylitol/maple sugar/rapadura
  • ⅛ tsp malic acid
For the whipped coconut cream:

  • The solid cream from 1 tin of coconut milk (refrigerated overnight)
  • 1 tbsp light agave nectar/maple syrup
  • ¼ tsp vanilla powder
For the pink frappuccino layer:

  • ½ cup cashew/almond milk
  • 2 tbsp Hybrid Herbs Pitaya Powder
  • 2-3 tbsp eryhtritol/xylitol/maple sugar/rapadura
  • 1 tbsp mango flesh (optional)
  • 2 tsp freeze dried strawberry powder
  • 2 tsp light agave nectar
  • ¼ tsp vanilla powder (optional)
  • 1½ cups crushed ice
For the blue frappuccino layer:

  • ½ cup cashew/almond milk
  • 3 tbsp eryhtritol/xylitol/maple sugar/rapadura
  • 2 tsp E3 Live Blue Majik
  • 2 tsp light agave nectar
  • ½ tsp malic acid
  • 1½ cups crushed ice
Instructions
  1. Firstly start by creating your 'unicorn dust'. This will be sprinkled on top of your whipped coconut cream at the end. In a Nutribullet style blender, using the milling blade, blend all of the ingredients for your pink unicorn dust until it forms a fine powder. Empty, scrape clean, and then repeat the process for the blue unicorn dust.
  2. Next remove your tin of chilled coconut milk from the fridge. Open the tin, poke a hole into the creamy top layer and drain out all of the water. Scoop out all of the solid cream into a large mixing bowl and add your agave nectar and vanilla powder. Begin to whisk using large strokes, beating in as much air as possible. This will make the cream nice and fluffy and light. Once the cream forms large stiff peaks it is done. Set to one side until needed later.
  3. It's now time to make your frappuccino. In a high powered blender add your cashew milk, pitaya powder, erythritol, mango, freeze dried strawberry powder, and agave nectar and blend until smooth. Be sure to periodically scrape down the sides to ensure the ingredients are evenly distributed. Next add your ice and blend on a high speed until smooth, thick, and icy. Pour into a container and place into your freezer to ensure the mix doesn't melt.
  4. Give your blender a quick rinse, add in all of the ingredients for your blue layer except for your ice, blending until smooth like you did before. Add in your ice and blend until smooth and thick.
  5. It's now time to assemble your magnificent Unicorn Frappuccino! In 2 large glasses (about 500ml) begin to layer up your pink and blue frappuccino mixes. Start with the pink and add in some blue until all of the mixture has been used up. Insert a chop stick and give the drinks a quick but gentle stir to slightly blend the layers.
  6. Add a big dollop of your whipped coconut cream, sprinkle over your pink and blue unicorn dusts, and enjoy!

*All cup measurements used are UK cup measurements and so 1 cup = 250ml.

    Ok, WTF is a unicorn frappuccino and how come I have never seen these before? I must live under a rock or it stands as a testament of how Starbucks no longer has that death grip hold over me anymore. Either way, I now am the proud owner of some E3 Blue Majik (thanks to you) so I can make it, cause it kinda looks AWESOME.
