Raw Vegan After Dinner Mints with Truth Naturals CBD Oil

Ingredients
For the raw chocolate layer:
  • ¾ cup coconut oil (melted)
  • ¾ cup cacao powder
  • ¼-1/3 cup maple syrup
For the mint fondant:

  1. If using a brownie tin start by greasing and lining this with parchment paper. Divide all of your ingredients for the raw chocolate layer equally between 2 separate heatproof bowls. Place one bowl over a pan of gently simmering water (don’t allow the water to touch the bowl) and heat until fully melted. Always use a low heat when melting cacao-based ingredients and never any higher to yield best results. Once melted divide equally between each silicone mould cavity, I found using a tablespoon measure the most effective way of doing this. If using a brownie tin just simply pour in your chocolate mixture. Place in the fridge or freezer until set.
  2. Next, it's time to whip up your fondant. Start by powdering your xylitol and cane sugar using a milling blade attachment in a bullet style blender. Sieve half of your powdered sugar into the bowl of your stand mixer, or if using a hand mixer a large mixing bowl will suffice. Add your aquafaba and mix until well combined. Add your remaining powdered sugar and the rest of your fondant ingredients and mix until you reach a thick and spreadable but smooth paste.
  3. Once your chocolate has fully set divide your peppermint fondant equally into each indentation or alternatively spread an even layer using an offset spatula. Place back into the fridge or free until set (this could take up to 1 hour).
  4. Before removing your fondants from the fridge melt down the remaining chocolate ingredients using the previous method. Remove your fondants and again pour over the chocolate. If using a brownie tin you might find tipping the tray to move the chocolate around an easier method than spreading. Place back into the refrigerator until set.
  5. Once set carefully pull away from the sides of your mould before pushing out the chocolates or alternatively transfer from your brownie tin and break apart.
Notes
All cup measurements used are UK cup measurements. 1 cup = 250ml, 1 tbsp = 15ml.

Additional equipment required: 1 x large 50mm Silicone Mould No.8 Cubes (holds roughly 125ml per indentation) or a brownie tin (20cm/8"x20cm/8"x6cm/1.5").

If using essential oils please ensure that they are both food grade and organic first!

Please note prep time is inclusive of setting time. The actual recipe takes about 15-20 minutes to make!
