Charcoal Waffle Cones (Paleo, Gluten-Free, Vegan)

Join the foodie brigade with these Charcoal Waffle Cones to reach a whole new level of Instagram hipster. Made with coconut activated sugar and free from gluten, grains and refined sugars these are the healthiest cones in town!
Ingredients
  • 40g/1/4 cup coconut sugar (powdered)
  • 1 egg white or 1 chia egg (see 'Notes' for vegan option)
  • 50g almond flour
  • 20g arrowroot flour
  • 1-2 tbsp activated charcoal
  • 4-5 tbsp nut milk
  • ½ tsp vanilla extract
  • 2 tbsp butter/coconut oil (melted)
Instructions
  1. Whisk together, using a silicone whisk, the eggs (or chia egg) and powdered coconut sugar together in a large glass or plastic bowl until pale and thickened. Gradually whisk in the flours and coconut charcoal powder until well combined. Next whisk in the melted butter and vanilla extract until smooth and then gradually whisk in the nut milk tablespoon by tablespoon. The batter should be fairly thick however you can stir in more milk if you feel it is needed. The thicker the mixture the sturdier the cone!
  2. Next heat your waffle cone machine as per the manufacturer's instruction. If you don't have one then simply heat a small skillet or griddle pan on a low heat. Brush your machine or skillet lightly with some coconut oil. Place 1-1.5 tbsp of batter into the middle of the machine then gently close and press firmly for 3 seconds. If you're using a skillet be sure to spread the batter out with an angled palette knife into a thin circle.
  3. Cook until the edges start to become a darker colour and the middle looks dull and firm - this should take about 1-2 minutes. If you're using a skillet you may need to flip over and cook the other side first.
  4. Using your palette knife gently lift the bottom corner up and start wrapping around your wooden waffle cone roller gently with your fingers before using a clean, dry tea towel to continue. Focus on rolling the bottom of the cone first, tightly and firmly, making it easier to shape the rest of the cone. Try not to roll it too tightly or you will struggle to remove your roller.
  5. Before removing your roller press firmly along the seam with your tea towel and then gently slide the roller out. Place on a wire rack to cool and harden completely and repeat the process with the remaining batter.
Notes
If opting for chia egg ensure that you use 1 tbsp of milled chia seeds in 3 tbsp of water. Leave to 'gel' for 10 minutes before using. You may also need to add additional nut milk to the overall mix.
