Cherry Chia Breakfast Parfait (Gluten-Free, Paleo, Vegan)

Make breakfast super special with this Cherry Chia Breakfast Parfait - almond chia pudding, cherry 'jam', coconut whipped cream, and a raw chocolate shell.
Ingredients
For the almond chia pudding:
  • 200ml cashew milk (or other nut milk of choice)
  • 3 tbsp chia seeds
  • 1 tbsp maple syrup/light agave/raw honey
  • 1 tsp almond extract
  • ¼ tsp vanilla powder or 1 tsp vanilla extract
For the cherry chia jam:
  • 200g pitted fresh cherries
  • 2 tbsp chia seeds (preferably white)
  • 2-3 tbsp maple syrup/light agave/raw honey
  • 1 tbsp lemon juice
For the coconut whipped cream:
  • The hard layer of cream from 1 tin of coconut milk that has been chilled overnight.
  • 1-2 tbsp agave nectar/maple syrup/raw honey
  • 1 tsp almond extract
  • ¼ tsp vanilla powder or 1 tsp vanilla extract
For the chocolate magic shell:
  • 4 tbsp coconut oil (melted)
  • 3 tbsp cacao powder
  • 1 tbsp maple syrup/light agave/raw honey
Optional toppings:
  • Fresh cherries
  • Chopped pistachios
  • Cacao nibs
Instructions
  1. Stir all of the ingredients together for your chia pudding and leave to set in the fridge overnight.
  2. Next Blend all of the ingredients for your cherry jam in a blender until smooth. Place in an airtight container and leave in the fridge overnight.
  3. In the morning layer up your chia pudding and jam in 2-4 glasses or mason jars. Place to one side.
  4. Begin to whip together the ingredients for your coconut whipped cream. Pile your cream on top of the glasses.
  5. Next stir together your ingredients for your chocolate sauce and drizzle over. Sprinkle over your toppings and enjoy!
Notes
*Preparation Time is 15 minutes plus an overnight setting time.
**Please note that all cup measurements used are British cups and thus equal to 250ml.
