You'll be doing the Monster Mash after drinking this Eyeball Punch. Made 2 fun ways; Zombie Punch featuring bergamot and matcha, and Blood Punch with pomegranate and Lion's Mane.
Ingredients
For the Eyeballs:
2 x 425g tins lychees in light syrup or juice (syrup reserved)
Start by making your eyeballs. Drain the 2 tins of lychees, reserving the syrup/juice, then place into a large bowl. Insert a blueberry into the cavity of each lychee keeping the part of the blueberry where the stem would have been facing out. Repeat until all lychees have been filled.
To make the Zombie Punch place the apple and elderflower juice, matcha, and bergamot peel into a bullet-style blender and blend until smooth. Pass through a fine-mesh sieve into a suitable container then add the remaining ingredients and stir. Set to one side.
For the Blood Punch place the pineapple juice, pomegranate juice, Lion's Mane powder, and root ginger into a bullet-style blender and blend until smooth. Pass through a fine-mesh sieve into a suitable container then add the remaining ingredients and stir. Set to one side.
To serve either divide the eyeballs between the serving containers or add a few eyeballs to highball glasses and pour over the punch of choice.
Notes
Each punch serves roughly 5 people.
If you can't get hold of bergamot then use a lime instead, it will still be scrumptious! Again with beetroot juice you can sub for more pomegranate juice instead, or even cranberry juice for something a little more tart.
