CBD Shandy

This CBD Shandy is refined sugar-free and uses Hop & Hemp's Lowdown Lager for an 8mg shot of full-spectrum CBD for the ultimate relaxing, non-alcoholic beverage.
For the fresh sparkling lemonade:
  • 5 medium organic unwaxed lemons
  • 150g raw cane sugar/rapadura
  • 50g erythritol and stevia mix (or more cane sugar)
  • 750-1000ml cold sparkling mineral water
For each CBD Shandy:
  1. Roll the lemons firmly against the kitchen surface in order to release the oils and soften their rinds. Halve and juice each lemon, transfer the juice to an airtight container and refrigerate.
  2. Cut rinds into 8ths then toss together with the raw cane sugar and erythritol in a large, non-metal, mixing bowl. Cover tightly with clingfilm or beeswax wrap. Leave to stand at room temperature, stirring every 30 minutes, until the sugar has completely dissolved. This took about 3 hours.
  3. Add the reserved lemon juice, stir then leave to sit for a further 30 minutes. Strain through a fine-mesh strainer into a large swing top glass bottle. Add the sparkling water, seal, then give a gentle shake, release the lid to let the air out.
  4. Combine 330ml of Lowdown Lager with 330ml of lemonade and divide between 2 glasses.
Although the recipe states it serves 2, there is enough lemonade for 6 servings if 1 litre of sparkling water is used.

The lemonade can be stored for up to 3 days in the refrigerator. Alternatively, make the lemon syrup and store for up to 1 week in an airtight container within the refrigerator. Combine with the sparkling water when ready to serve.

If you would rather use agave nectar in replacement of the sugar, only use ⅔ of the weight. Agave is much sweeter!
