This Autumn Superfood Salad is packed with seasonal produce and nutritious immune-boosting superfood powders, seeds, and nuts from the amazing Indigo Herbs.
For the dressing:
For the salad:
  1. Start by making your dressing. Simply add all of the ingredients except for the chia seeds and water into a bullet-style blender and blend until smooth, next add half the water and blend, then repeat with the other half. Stir in the chia seeds and leave to sit in the fridge until needed.
  2. Next, add your kale to a large bowl and ensure that you remove all of the woody stalks first. Pour over your olive oil then massage for 5-10 minutes to reduce bitterness.
  3. Stir in your remaining ingredients then drizzle with dressing and serve.
To toast your nuts and seeds simply place them into a dry skillet/frying pan on a low to medium heat and cook until the seeds begin to pop. Stir continuously.
