Bounty Smoothie Bowl (Paleo, Vegan)

Everybody loves a good smoothie bowl, Anya goes absolutely nuts for them! And to be honest I can see why – it’s like eating ice cream for breakfast and I can’t really think of anything better than that really. Anyway, as you all know every month the wonderful people at Ninja Kitchen pay me to create 2 delicious recipes using their awesome range of kitchen equipment but don’t worry if you don’t own one of their blenders as you’ll still be able to make this yummy Bounty Smoothie Bowl with any semi-decent blender.

Get your day started with a little bowl of paradise. This Bounty Smoothie Bowl is every coconut lover’s dream – creamy coconut, sweetened with frozen banana and grapes, and a drizzle of dark chocolate.

As a kid, I was obsessed with Bounty Bars and then I remember them releasing them in ice cream form and it was literally the best thing that had ever happened in the world. Or at least I thought so. I’ve already made CBD Bounty Bars and Cherry Bounty Bars on my blog but it had suddenly dawned on me that turning a Bounty into a smoothie bowl would be super amazing, so I got cracking with my Ninja blender and tried a few variations until I came up with one that I absolutely loved.

Trying to combat the richer flavours of other frozen fruits was tricky – I used a combination of frozen banana and white grapes along with some frozen young Thai coconut meat. The result was pretty creamy but to get that coconut flavour to shine through you definitely need to invest in a decent coconut essence or extract. I love the Coconut Medicine Flower Extract and it’s as close as you’re going to get to a true coconutty flavour.  If you can’t find frozen virgin young Thai coconut meat then regular frozen coconut flesh should be fine but you may need to dabble with the liquid content to get the right consistency. Alternatively, you can soak desiccated coconut in freshly boiled water for 10-30 minutes to rehydrate, then drain and blend. Simples.
